Warm, golden pastry pinwheels filled with a creamy, garlicky spinach dip, perfect for any gathering.

- 1 bag frozen chopped spinach (10 oz), thawed and well-drained
- 1 block cream cheese (8 oz), brought to room temperature
- 1/2 cup grated Parmesan (about 50 g)
- 1/4 cup mayonnaise (about 60 g)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch red pepper flakes (optional)
- 1 sheet puff pastry, thawed but still cold (about 8 oz / 227 g)
- 1 egg, beaten (for brushing)
Instructions
- In a bowl, mix cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Squeeze excess moisture from the spinach and mix it in until well combined.
- Flour the counter, roll out the puff pastry, spread the spinach mixture over it, leaving one long side empty. Roll it up tightly like a jelly roll.
- Wrap the log in plastic and refrigerate for 30 minutes to firm up. Preheat the oven to 400°F while you wait.
- Remove the log from the fridge and slice it into half-inch rounds. Place them on a baking sheet lined with parchment. Brush the tops with beaten egg.
- Bake for 15–20 minutes until they puff and turn golden brown.
