Spinach Dip in Bite-Sized Pinwheels


Description

These warm, golden spirals deliver a buttery, flaky crunch with a luxuriously creamy spinach and Parmesan filling, perfect for any gathering.


Ingredients

  • 1 bag frozen chopped spinach (10 oz), thawed and very well squeezed
  • 1 block cream cheese (8 oz), softened
  • 1/2 cup grated Parmesan (about 50 g)
  • 1/4 cup mayonnaise (about 60 g)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • Pinch red pepper flakes (optional, to taste)
  • 1 sheet puff pastry, thawed but still cold (about 1 sheet, ~8 oz)
  • 1 egg, beaten (for brushing)

Instructions

  1. In a bowl, mix cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Add the squeezed spinach and mix until even.
  2. Flour your counter and roll out the puff pastry. Spread the spinach mix evenly over it, leaving one long side empty. Roll it up tightly like a jelly roll.
  3. Wrap the log in plastic and refrigerate for 30 minutes to firm up. Preheat the oven to 400°F.
  4. After chilling, slice the log into half-inch rounds and place them on a baking sheet with parchment. Brush them with beaten egg and bake for 15-20 minutes until puffed and golden.

Notes

Use clean paper towels or a cheesecloth to squeeze spinach very dry. To reduce calories, use lower-fat versions of cream cheese and mayonnaise. These pinwheels can be made ahead and frozen before baking.
