- 1 bag frozen chopped spinach (10 oz), thawed and very well squeezed
- 1 block cream cheese (8 oz), softened
- 1/2 cup grated Parmesan (about 50 g)
- 1/4 cup mayonnaise (about 60 g)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch red pepper flakes (optional, to taste)
- 1 sheet puff pastry, thawed but still cold (about 1 sheet, ~8 oz)
- 1 egg, beaten (for brushing)
Instructions
- In a bowl, mix cream cheese, Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Add the squeezed spinach and mix until even.
- Flour your counter and roll out the puff pastry. Spread the spinach mix evenly over it, leaving one long side empty. Roll it up tightly like a jelly roll.
- Wrap the log in plastic and refrigerate for 30 minutes to firm up. Preheat the oven to 400°F.
- After chilling, slice the log into half-inch rounds and place them on a baking sheet with parchment. Brush them with beaten egg and bake for 15-20 minutes until puffed and golden.
Notes
Use clean paper towels or a cheesecloth to squeeze spinach very dry. To reduce calories, use lower-fat versions of cream cheese and mayonnaise. These pinwheels can be made ahead and frozen before baking.
