- 8 oz fettuccine pasta
- 1 cup fresh spinach
- 1 lb Italian sausage
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
Instructions
- In a large pot, bring salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
- Add the sausage to the skillet, breaking it apart with a spatula. Cook until browned and cooked through (about 5-7 minutes).
- Stir in the fresh spinach and cook until just wilted, approximately 2-3 minutes.
- Lower the heat and pour in the heavy cream, stirring to combine.
- Gradually add the grated Parmesan cheese to the skillet, stirring until melted and the sauce thickens (about 2-3 minutes).
- Add the drained fettuccine to the skillet, tossing everything together until the pasta is evenly coated in the creamy sauce.
- Add salt and pepper to taste.
- Serve hot, garnished with extra Parmesan cheese if desired, and enjoy!
Notes
For a richer flavor, consider using homemade Alfredo sauce. Store leftovers in an airtight container for up to 3 days.
