Spinach Sausage Alfredo Pasta

  • 8 oz fettuccine pasta
  • 1 cup fresh spinach
  • 1 lb Italian sausage
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. In a large pot, bring salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Add the sausage to the skillet, breaking it apart with a spatula. Cook until browned and cooked through (about 5-7 minutes).
  4. Stir in the fresh spinach and cook until just wilted, approximately 2-3 minutes.
  5. Lower the heat and pour in the heavy cream, stirring to combine.
  6. Gradually add the grated Parmesan cheese to the skillet, stirring until melted and the sauce thickens (about 2-3 minutes).
  7. Add the drained fettuccine to the skillet, tossing everything together until the pasta is evenly coated in the creamy sauce.
  8. Add salt and pepper to taste.
  9. Serve hot, garnished with extra Parmesan cheese if desired, and enjoy!

Notes

For a richer flavor, consider using homemade Alfredo sauce. Store leftovers in an airtight container for up to 3 days.
