Ingredients

- 1 (14-oz) package extra firm tofu
- 2 tbsp cornstarch
- ½ cup soy sauce (or coconut aminos)
- 3 tbsp maple syrup
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 3 cloves minced garlic
- 1 tbsp grated ginger
- 3 cups cooked rice
- 2 cups steamed edamame
- 1 avocado
- Optional: sesame seeds and spring onions for garnish
Instructions
- Open the package of tofu, drain the excess water, and press out the extra liquid.
- Cut the tofu into small to medium-sized cubes. Transfer to a container, dust with cornstarch, seal, and shake gently to coat the tofu.
- Heat a generous amount of olive oil in a pan over medium heat. Add the tofu and cook, stirring frequently, until golden brown and crispy on all sides.
- While the tofu cooks, whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger until well combined.
- Once the tofu is crispy, pour the sauce over it, allowing it to cook for several minutes until thickened.
- Assemble your bowls: start with a base of rice, then layer in the crispy tofu, steamed edamame, and slices of avocado. Drizzle with remaining sauce, and garnish with sesame seeds and sliced spring onions.
- Serve immediately and enjoy!
Notes
For extra crunch, coat the tofu thoroughly in cornstarch and ensure it’s well-pressed beforehand.
