Ingredients
- Rice noodles: 8 ounces
- Soy sauce: 3 tablespoons
- Dark soy sauce: 1 tablespoon
- Palm sugar: 1 tablespoon
- Garlic: 2 cloves, minced
- Vegetable oil: 2 tablespoons
- Eggs: 2, lightly beaten
- Chinese broccoli (or any greens): 1 cup, chopped
- Protein of choice (chicken, shrimp, or tofu): 1 cup, diced
Instructions
- Soak the rice noodles in hot water for about 30 minutes until soft. Drain and set aside.
- In a bowl, mix soy sauce, dark soy sauce, and palm sugar until combined.
- Heat oil in a large pan or wok over medium-high heat. Add minced garlic and stir-fry until fragrant.
- Add your protein of choice and cook until browned, pushing it to one side of the pan.
- Crack in the eggs and scramble them until just set.
- Add the drained noodles and sauce mixture; toss everything together for a few minutes until well combined.
- Fold in the Chinese broccoli and stir-fry until just wilted.
- Serve hot and enjoy!
Notes
Consider using a mix of light and dark soy sauce for depth of flavor. Avoid overcooking veggies to retain their crunch.
