Stir-Fried Noodles


Description

A flavorful dish of stir-fried noodles with vegetables and your choice of protein, perfect for any cozy evening.


Ingredients

  • Rice noodles: 8 ounces
  • Soy sauce: 3 tablespoons
  • Dark soy sauce: 1 tablespoon
  • Palm sugar: 1 tablespoon
  • Garlic: 2 cloves, minced
  • Vegetable oil: 2 tablespoons
  • Eggs: 2, lightly beaten
  • Chinese broccoli (or any greens): 1 cup, chopped
  • Protein of choice (chicken, shrimp, or tofu): 1 cup, diced

Instructions

  1. Soak the rice noodles in hot water for about 30 minutes until soft. Drain and set aside.
  2. In a bowl, mix soy sauce, dark soy sauce, and palm sugar until combined.
  3. Heat oil in a large pan or wok over medium-high heat. Add minced garlic and stir-fry until fragrant.
  4. Add your protein of choice and cook until browned, pushing it to one side of the pan.
  5. Crack in the eggs and scramble them until just set.
  6. Add the drained noodles and sauce mixture; toss everything together for a few minutes until well combined.
  7. Fold in the Chinese broccoli and stir-fry until just wilted.
  8. Serve hot and enjoy!

Notes

Consider using a mix of light and dark soy sauce for depth of flavor. Avoid overcooking veggies to retain their crunch.
