Strawberry Brownies


Description

Delicious strawberry brownies made with a boxed cake mix, topped with a sweet strawberry glaze.


Ingredients

  • 1 (15.25-ounce) box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 2 tablespoons strawberry preserves
  • 1 1/2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish and line with parchment paper.
  2. In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla. Mix until just combined.
  3. Spread the batter into the prepared baking dish and flatten the top.
  4. Bake for 20–23 minutes until a toothpick comes out mostly clean.
  5. Cool in the pan for at least 20 minutes.
  6. For the glaze, whisk together powdered sugar, strawberry preserves, and milk until smooth.
  7. Spread the glaze over the cooled brownies and let it set before cutting into squares.

Notes

Try using butter instead of vegetable oil for a richer flavor. Can also substitute eggs with flax eggs for an egg-free option.
