A delightful cake combining rich chocolate and fresh strawberries, perfect for celebrations.

- 1 and 3/4 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 and 1/2 teaspoons baking soda
- 1 and 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk (dairy or non-dairy substitute)
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for filling)
- 2 tablespoons lemon juice
- 1 cup heavy whipping cream (for frosting)
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- Additional fresh strawberries (for garnish)
- Chocolate shavings (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, and salt. Whisk until well mixed.
- Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
- Carefully stir in the boiling water. The batter will be thin.
- Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- While cakes bake, combine the sliced strawberries, sugar, and lemon juice in a bowl. Let sit for 15 minutes.
- Once done, cool the cakes in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the frosting, whip the cream in a bowl until soft peaks form. Add powdered sugar and vanilla, mixing until stiff peaks form.
- Once the cakes are cooled, place one layer on a serving plate. Spread strawberry mixture and whipped cream on top.
- Place the second cake layer on top and frost the entire cake with remaining whipped cream.
- Garnish with strawberries and chocolate shavings, if desired.
Notes
Use room temperature ingredients for better mixing and avoid overmixing to keep the cake light.
