Strawberry Chocolate Cake


Description

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking soda
  • 1 and 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk (dairy or non-dairy substitute)
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for filling)
  • 2 tablespoons lemon juice
  • 1 cup heavy whipping cream (for frosting)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Additional fresh strawberries (for garnish)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, and salt. Whisk until well mixed.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
  4. Carefully stir in the boiling water. The batter will be thin.
  5. Pour the batter into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  6. While cakes bake, combine the sliced strawberries, sugar, and lemon juice in a bowl. Let sit for 15 minutes.
  7. Once done, cool the cakes in the pans for 10 minutes before transferring to a wire rack to cool completely.
  8. For the frosting, whip the cream in a bowl until soft peaks form. Add powdered sugar and vanilla, mixing until stiff peaks form.
  9. Once the cakes are cooled, place one layer on a serving plate. Spread strawberry mixture and whipped cream on top.
  10. Place the second cake layer on top and frost the entire cake with remaining whipped cream.
  11. Garnish with strawberries and chocolate shavings, if desired.

Notes

Use room temperature ingredients for better mixing and avoid overmixing to keep the cake light.
