Strawberry Lemonade Cake

Ingredients

  • 1 box of lemon cake mix
  • 1 cup of lemonade
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1 cup of fresh strawberries, chopped
  • 1 cup of powdered sugar
  • 2 tablespoons of lemon juice
  • 1 cup of heavy cream
  • 1 teaspoon of vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, combine the lemon cake mix, lemonade, vegetable oil, and eggs. Mix until smooth.
  3. Gently fold in the chopped strawberries.
  4. Pour the batter into the prepared cake pan. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. While the cake cools, whip together the heavy cream, powdered sugar, lemon juice, and vanilla until stiff peaks form.
  6. Once cooled, frost the cake with the whipped cream mixture.

For a gluten-free version, substitute the lemon cake mix with a gluten-free cake mix. For a vegan option, use plant-based egg substitutes and coconut cream.
