Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup heavy cream
- 2 cups fresh strawberries, hulled and sliced
- 2 tablespoons sugar (for strawberries)
- Whipped cream (for serving)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, baking powder, salt, and sugar; whisk until well incorporated.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream until just combined, being careful not to overmix.
- Turn the dough onto a floured surface and knead gently until it holds together without being sticky.
- Roll out the dough to about 1-inch thickness and cut into rounds using a biscuit cutter or glass.
- Place the biscuits on the prepared baking sheet and bake for 15-18 minutes, until golden brown on top.
- Meanwhile, toss the sliced strawberries with 2 tablespoons of sugar and let sit for about 10 minutes to draw out their juices.
- Split the biscuits in half, layer with strawberries and whipped cream, and serve immediately.
Notes
For a richer flavor, add vanilla extract to the cream. Use cold butter for flaky layers.
