Description

Delightful summer biscuits layered with fresh strawberries and whipped cream, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup heavy cream
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar (for strawberries)
  • Whipped cream (for serving)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, salt, and sugar; whisk until well incorporated.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until just combined, being careful not to overmix.
  5. Turn the dough onto a floured surface and knead gently until it holds together without being sticky.
  6. Roll out the dough to about 1-inch thickness and cut into rounds using a biscuit cutter or glass.
  7. Place the biscuits on the prepared baking sheet and bake for 15-18 minutes, until golden brown on top.
  8. Meanwhile, toss the sliced strawberries with 2 tablespoons of sugar and let sit for about 10 minutes to draw out their juices.
  9. Split the biscuits in half, layer with strawberries and whipped cream, and serve immediately.

Notes

For a richer flavor, add vanilla extract to the cream. Use cold butter for flaky layers.
