			- 2 cups all-purpose flour
 - 1 teaspoon baking powder
 - 1/2 teaspoon baking soda
 - 1/4 teaspoon salt
 - 3/4 cup unsalted butter, softened
 - 1 cup granulated sugar, plus 1/4 cup for sparkling topping
 - 1 large egg
 - 1 teaspoon vanilla extract
 - 1/2 cup fresh strawberries, pureed
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a small bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
 - In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy – about 3-5 minutes.
 - Beat in the egg and vanilla extract until fully blended.
 - Gradually mix in the pureed strawberries until the mixture is smooth and evenly combined.
 - Carefully fold in the dry ingredients, mixing gently until just combined. Avoid overmixing to keep the cookies light.
 - Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
 - Sprinkle the top of each cookie with the remaining 1/4 cup of granulated sugar for that extra sparkle.
 - Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
 - Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Use ripe strawberries for the best flavor. Store in an airtight container for up to 3 days or freeze for longer storage.
