  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, pureed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  3. In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy – about 3-5 minutes.
  4. Beat in the egg and vanilla extract until fully blended.
  5. Gradually mix in the pureed strawberries until the mixture is smooth and evenly combined.
  6. Carefully fold in the dry ingredients, mixing gently until just combined. Avoid overmixing to keep the cookies light.
  7. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Sprinkle the top of each cookie with the remaining 1/4 cup of granulated sugar for that extra sparkle.
  9. Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use ripe strawberries for the best flavor. Store in an airtight container for up to 3 days or freeze for longer storage.
