Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another large bowl, cream together the softened butter and sugar until smooth.
  4. Beat in the egg and vanilla extract, mixing until well combined.
  5. Add the strawberry puree and mix until incorporated.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing to ensure soft cookies.
  7. Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper, spaced about 2 inches apart.
  8. Sprinkle each cookie generously with sparkling strawberry sugar.
  9. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may still look soft; they will firm up as they cool.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
