Stuffed Sub Salad Sandwich


Description

A delightful twist on a classic, combining the heartiness of a sub with refreshing salad textures, perfect for lunch or brunch.


Ingredients

  • 2 6-inch sub rolls
  • 1 cup shredded lettuce
  • 1/2 cup sliced tomatoes
  • 1/2 cup sliced cucumbers
  • 1/4 cup sliced red onion
  • 1/2 cup sliced pepperoncini
  • 1/2 cup deli meats (ham, turkey, salami)
  • 1/4 cup shredded cheese (mozzarella or cheddar)
  • 1/4 cup mayonnaise or mustard
  • Salt and pepper to taste

Instructions

  1. Slice the sub rolls in half and lightly toast them if desired.
  2. Spread mayonnaise or mustard on both sides of the rolls.
  3. On the bottom half, layer shredded lettuce, sliced tomatoes, cucumbers, red onion, pepperoncini, deli meats, and shredded cheese.
  4. Sprinkle salt and pepper across the filling.
  5. Place the top half of the roll on the filled bottom half and press down lightly.
  6. Slice the sandwich in half and serve immediately.

Notes

Best enjoyed fresh; can be kept at room temperature for up to 2 hours.
