Ingredients

- 2 6-inch sub rolls
- 1 cup shredded lettuce
- 1/2 cup sliced tomatoes
- 1/2 cup sliced cucumbers
- 1/4 cup sliced red onion
- 1/2 cup sliced pepperoncini
- 1/2 cup deli meats (ham, turkey, salami)
- 1/4 cup shredded cheese (mozzarella or cheddar)
- 1/4 cup mayonnaise or mustard
- Salt and pepper to taste
Instructions
- Slice the sub rolls in half and lightly toast them if desired.
- Spread mayonnaise or mustard on both sides of the rolls.
- On the bottom half, layer shredded lettuce, sliced tomatoes, cucumbers, red onion, pepperoncini, deli meats, and shredded cheese.
- Sprinkle salt and pepper across the filling.
- Place the top half of the roll on the filled bottom half and press down lightly.
- Slice the sandwich in half and serve immediately.
Notes
Best enjoyed fresh; can be kept at room temperature for up to 2 hours.
