Sugar Cookie Cheesecake

Ingredients

  • 1 ¾ cup All-purpose flour
  • ½ tsp Baking soda
  • ½ tsp Salt
  • ¾ cup Unsalted butter (room temperature)
  • 1 cup Regenerative Organic Certified® Cane Sugar
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1 Egg yolk (room temperature)
  • 1/3 cup Christmas sprinkles (jimmies)
  • 32 oz Cream cheese (room temperature)
  • 2/3 cup Regenerative Organic Certified® Cane Sugar
  • ¾ cup Sour cream (or Greek yogurt, room temperature)
  • ½ cup Heavy cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 4 Large eggs (room temperature)
  • 1 cup White chocolate chips
  • 1/3 cup Heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add in the vanilla extract, egg, egg yolk, and sprinkles; mix well.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Press the dough into the bottom of the prepared springform pan to create an even layer for your crust. Bake for 15-18 minutes, or until golden. Allow cooling.
  6. For the cheesecake, beat the cream cheese and sugar until smooth. Add sour cream, heavy cream, and vanilla; mix until well-blended.
  7. Add the eggs one at a time, mixing briefly after each addition. Avoid overmixing to maintain a smooth texture.
  8. Pour the cheesecake batter onto the cooled cookie crust.
  9. Bake for 55-60 minutes or until the center is set but still slightly jiggly. Let cool, then refrigerate for at least 4 hours or overnight.
  10. For the ganache, heat heavy cream until just simmering and pour over white chocolate chips. Stir until melted and smooth.
  11. Once cheesecake is chilled, pour ganache over the top and refrigerate for an additional hour before serving.

Notes

For best results, use room temperature ingredients and avoid overmixing. Consider a water bath for a creamier texture.
