Ingredients

  • 1 medium cabbage, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 tomatoes, diced
  • 4 cups vegetable broth
  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the chopped onion and sliced carrots over medium heat until soft, about 5 minutes.
  2. Add the chopped cabbage and cook for a few minutes until it starts to wilt.
  3. Stir in the diced tomatoes, vegetable broth, apple cider vinegar, soy sauce, and sugar, mixing well.
  4. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

To avoid overcooking the cabbage, only add it after the onions and carrots have softened. If you like a bit of spice, consider adding a pinch of red pepper flakes during the simmering step.
