			- 1 medium cabbage, chopped
 - 1 onion, chopped
 - 2 carrots, sliced
 - 3 tomatoes, diced
 - 4 cups vegetable broth
 - 1/4 cup apple cider vinegar
 - 2 tablespoons soy sauce
 - 2 tablespoons sugar
 - Salt and pepper to taste
 - Fresh parsley for garnish
 
Instructions
- In a large pot, sauté the chopped onion and sliced carrots over medium heat until soft, about 5 minutes.
 - Add the chopped cabbage and cook for a few minutes until it starts to wilt.
 - Stir in the diced tomatoes, vegetable broth, apple cider vinegar, soy sauce, and sugar, mixing well.
 - Bring to a boil, then reduce heat and simmer for about 30 minutes.
 - Season with salt and pepper to taste.
 - Serve hot, garnished with fresh parsley.
 
Notes
To avoid overcooking the cabbage, only add it after the onions and carrots have softened. If you like a bit of spice, consider adding a pinch of red pepper flakes during the simmering step.
