- 1 lb (450g) chicken breast, thinly sliced
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 medium carrot, julienned
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons honey
- 2 tablespoons Sriracha sauce
- 1 tablespoon soy sauce
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced chicken breast and stir-fry until cooked through and no longer pink.
- Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the red bell pepper, snap peas, and carrot, and stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the honey, Sriracha sauce, and soy sauce.
- Pour the sauce over the chicken and vegetables, stirring well to combine.
- Cook for another 2-3 minutes to allow the sauce to thicken slightly.
- Serve hot over rice or noodles as desired.
