Ingredients

  • 1 lb (450g) chicken breast, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 medium carrot, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons honey
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast and stir-fry until cooked through and no longer pink.
  3. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the red bell pepper, snap peas, and carrot, and stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together the honey, Sriracha sauce, and soy sauce.
  6. Pour the sauce over the chicken and vegetables, stirring well to combine.
  7. Cook for another 2-3 minutes to allow the sauce to thicken slightly.
  8. Serve hot over rice or noodles as desired.
