Sweet Potato Tots

  • 2 medium sweet potatoes
  • 1/2 cup flour (all-purpose or gluten-free alternative)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese (optional)
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Preheat the oven to 425°F (220°C) or heat oil in a deep fryer.
  2. Peel and boil the sweet potatoes until tender, about 15 minutes. Drain and let cool.
  3. In a bowl, mash the cooked sweet potatoes until smooth.
  4. Add flour, salt, pepper, paprika, garlic powder, and Parmesan cheese (if using). Mix until just combined – avoid overmixing.
  5. Shape the mixture into small tots using your hands.
  6. For baking, place tots on a lined baking sheet and spray lightly with cooking spray. Bake for 20-25 minutes, turning halfway through, until golden brown. For frying, cook them in hot oil until golden brown on each side.
  7. Serve warm with your preferred dipping sauce, such as ranch or chipotle mayo.

Notes

For an even crispier texture, consider using a mixture of sweet potato and regular potato. Ensure that sweet potatoes are well-drained after boiling.
