- 8 corn tortillas
- 2 cups cooked shredded chicken
- 1 cup Swiss cheese, grated
- 1 cup sour cream
- 1 cup green salsa (salsa verde)
- 1/2 cup diced onion
- 1 tablespoon olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté diced onion until translucent, about 3-4 minutes.
- Add the shredded chicken to the skillet and season with salt. Stir to combine and heat through, about 2-3 minutes.
- In a separate bowl, mix the green salsa with sour cream until well combined.
- Dip each tortilla in the salsa mixture, then fill with a portion of the chicken mixture and a sprinkle of cheese. Roll up tightly.
- Place the filled tortillas seam-side down in a baking dish.
- Pour any remaining salsa mixture over the top and sprinkle with the rest of the cheese.
- Bake for 20-25 minutes, until bubbly and golden brown.
- Garnish with fresh cilantro before serving.
Notes
Ensure tortillas are pliable before filling to avoid breakage. A quick dip in warm water can help.
