Description

Swiss Enchiladas combine the creamy goodness of Swiss cheese with traditional enchiladas for an innovative and comforting meal.


Ingredients

  • 8 corn tortillas
  • 2 cups cooked shredded chicken
  • 1 cup Swiss cheese, grated
  • 1 cup sour cream
  • 1 cup green salsa (salsa verde)
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté diced onion until translucent, about 3-4 minutes.
  3. Add the shredded chicken to the skillet and season with salt. Stir to combine and heat through, about 2-3 minutes.
  4. In a separate bowl, mix the green salsa with sour cream until well combined.
  5. Dip each tortilla in the salsa mixture, then fill with a portion of the chicken mixture and a sprinkle of cheese. Roll up tightly.
  6. Place the filled tortillas seam-side down in a baking dish.
  7. Pour any remaining salsa mixture over the top and sprinkle with the rest of the cheese.
  8. Bake for 20-25 minutes, until bubbly and golden brown.
  9. Garnish with fresh cilantro before serving.

Notes

Ensure tortillas are pliable before filling to avoid breakage. A quick dip in warm water can help.
