- 4 bell peppers (any color)
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheese (choose your favorite)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart as it cooks.
- Stir in the taco seasoning, black beans, corn, and salsa; cook for a few minutes until heated through.
- Stuff each bell pepper with the meat mixture and arrange them in a baking dish.
- Top each stuffed pepper generously with shredded cheese.
- Cover the dish with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze cooked stuffed peppers for up to 3 months.
