Taco Stuffed Peppers


Description

A vibrant dish combining seasoned ground meat, black beans, sweet corn, and melted cheese, all stuffed into bell peppers for a wholesome meal.


Ingredients

  • 4 bell peppers (any color)
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (choose your favorite)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart as it cooks.
  4. Stir in the taco seasoning, black beans, corn, and salsa; cook for a few minutes until heated through.
  5. Stuff each bell pepper with the meat mixture and arrange them in a baking dish.
  6. Top each stuffed pepper generously with shredded cheese.
  7. Cover the dish with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
  9. Garnish with chopped cilantro before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze cooked stuffed peppers for up to 3 months.
