- 4 bell peppers (any color)
- 2 cups cooked rice
- 1 cup cooked chicken, shredded
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup teriyaki sauce
- 1 tablespoon olive oil
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a pan, heat olive oil over medium heat and sauté the shredded chicken with salt, pepper, and teriyaki sauce for about 5 minutes.
- In a bowl, mix cooked rice, pineapple chunks, and green onions together until evenly combined.
- Combine the chicken mixture with the rice mixture until well incorporated.
- Stuff each bell pepper generously with the chicken and rice mixture.
- Place the stuffed peppers upright in a baking dish and add a little water to the bottom of the dish (this helps steam the peppers).
- Cover the baking dish with foil and bake for 25-30 minutes.
- Remove foil and bake for an additional 10 minutes until the peppers are tender and slightly caramelized.
- Serve hot and enjoy!

Choose ripe bell peppers for the best flavor. Customize spice levels to your preference.
