Tomato Basil Bruschetta


Description

A delightful stack of toasted bread topped with sun-kissed tomatoes, fresh basil, and a hint of garlic, perfect for any gathering or a light summer appetizer.


Ingredients

  • 1 baguette (about 300 g)
  • 4 large ripe tomatoes, diced (about 700750 g total)
  • 1/4 cup fresh basil leaves, chopped (about 15 g)
  • 2 cloves garlic, minced (plus extra whole clove for rubbing bread)
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Balsamic glaze, for drizzling (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch (about 1.3 cm) thick slices and arrange them on a baking sheet.
  3. Toast the bread in the oven for about 5–7 minutes, or until golden brown and crisp at the edges. Watch carefully — bread can go from golden to burnt quickly.
  4. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, salt, and pepper. Mix gently to combine.
  5. Once the bread is toasted, rub one side of each slice lightly with a whole garlic clove for a subtle garlic aroma.
  6. Top each toasted slice with a spoonful of the tomato mixture.
  7. Drizzle with balsamic glaze if desired.
  8. Serve immediately and enjoy!

Notes

For a gluten-free version, use gluten-free bread. Store components separately for best results.
