- 4 oz cream cheese, softened (full-fat for richness or light for fewer calories)
- 1 tablespoon plain Greek yogurt (optional, for a lighter filling)
- 1 teaspoon lemon zest (plus extra lemon wedges for serving)
- 1 tablespoon fresh dill, finely chopped (plus sprigs for garnish)
- 1 tablespoon capers, drained (optional)
- Freshly ground black pepper, to taste
Instructions
- Prepare cucumbers: Wash and dry the cucumber. Slice into 1/4-inch thick rounds and pat dry.
- Make the spread: Combine cream cheese, Greek yogurt, lemon zest, and dill in a bowl. Mix until smooth.
- Assemble the bites: Place about 1/2 teaspoon of cream cheese mixture on each cucumber round. Top with a piece of smoked salmon, capers, and a sprinkle of dill or chives.
- Chill briefly: Chill assembled bites in the refrigerator for 15–30 minutes before serving.
- Final flourish: Garnish with microgreens or additional lemon zest before serving.
Notes
Pat cucumber slices dry to prevent sogginess. The spread and salmon can be prepared in advance.
