Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup diced bell peppers (red, yellow, green)
  • 1 cup diced cucumber
  • 1 cup diced mango
  • 1 cup diced avocado
  • 1/2 cup chopped red cabbage
  • 1/4 cup chopped fresh basil
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a pot, combine the rinsed quinoa and water. Bring to a boil.
  2. Reduce heat to low and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
  3. In a large bowl, combine the cooked quinoa, bell peppers, cucumber, mango, avocado, and red cabbage.
  4. In a small bowl, whisk together lime juice, olive oil, and chopped basil. Season with salt and pepper.
  5. Pour the dressing over the quinoa and veggies, tossing gently to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing meal.
