- 4 large potatoes
- 1 can of tuna, drained
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat oven to 400°F (200°C).
- Wash the potatoes and prick them with a fork. Drizzle with olive oil and sprinkle with salt.
- Bake the potatoes for 45-60 minutes, or until tender.
- In a bowl, mix the tuna, shredded cheese, sour cream, chopped green onions, salt, and pepper until well combined.
- Once the potatoes are done, let them cool slightly, cut them in half, and scoop out some of the insides.
- Fill the potato halves with the tuna mixture and top with additional cheese if desired.
- Return the stuffed potatoes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
