Tuna Stuffed Cheesy Potatoes

  • 4 large potatoes
  • 1 can of tuna, drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork. Drizzle with olive oil and sprinkle with salt.
  3. Bake the potatoes for 45-60 minutes, or until tender.
  4. In a bowl, mix the tuna, shredded cheese, sour cream, chopped green onions, salt, and pepper until well combined.
  5. Once the potatoes are done, let them cool slightly, cut them in half, and scoop out some of the insides.
  6. Fill the potato halves with the tuna mixture and top with additional cheese if desired.
  7. Return the stuffed potatoes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  8. Enjoy your delicious creation fresh from the oven!
