Ingredients

- 4 large potatoes
- 1/2 cup green peas (fresh or frozen)
- 1/2 cup chopped cucumbers
- 1/2 cup chopped tomatoes
- 1/4 cup chopped red onion
- 1/4 cup chopped parsley
- 1/2 cup olive oil
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes, let them cool, then peel and cut into bite-sized cubes.
- In a large bowl, combine the cubed potatoes, green peas, cucumbers, tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until emulsified.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
