Tuscan-Style Chicken Orzo


Description

A cozy comfort dish combining chicken, orzo pasta, sun-dried tomatoes, and spinach in a flavorful broth, perfect for any occasion.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil
  • Grated Parmesan cheese for serving

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the diced chicken to the skillet and cook until browned all over, about 5-7 minutes.
  3. Stir in the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the orzo, chicken broth, diced tomatoes (with juices), sun-dried tomatoes, chopped spinach, and Italian seasoning to the skillet.
  5. Stir well and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with freshly grated Parmesan cheese.

Notes

For extra flavor, marinade the chicken in Italian herbs beforehand. This dish can also be made vegan or gluten-free with simple substitutions.
