- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
- Grated Parmesan cheese for serving
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the diced chicken to the skillet and cook until browned all over, about 5-7 minutes.
- Stir in the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the orzo, chicken broth, diced tomatoes (with juices), sun-dried tomatoes, chopped spinach, and Italian seasoning to the skillet.
- Stir well and bring the mixture to a boil.
- Once boiling, reduce the heat to low and simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Season with salt and pepper to taste.
- Serve warm, garnished with freshly grated Parmesan cheese.
Notes
For extra flavor, marinade the chicken in Italian herbs beforehand. This dish can also be made vegan or gluten-free with simple substitutions.
