Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs, 1/2 cup sugar, and melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth, then add 1 cup sugar and vanilla extract, mixing until well incorporated.
  4. Add the eggs, one at a time, mixing well after each addition to ensure a smooth texture.
  5. Pour the cream cheese mixture over the prepared crust in the springform pan.
  6. Bake for 1 hour, then turn off the oven and let the cheesecake cool inside for another hour.
  7. Spread the sour cream over the top and return to the oven for an additional 10 minutes to set.
  8. Remove from the oven and refrigerate for at least 4 hours (preferably overnight) before serving.

Notes

Use a water bath for extra moisture while baking to help prevent cracks.
