- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, mix the graham cracker crumbs, 1/2 cup sugar, and melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese until smooth, then add 1 cup sugar and vanilla extract, mixing until well incorporated.
- Add the eggs, one at a time, mixing well after each addition to ensure a smooth texture.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake for 1 hour, then turn off the oven and let the cheesecake cool inside for another hour.
- Spread the sour cream over the top and return to the oven for an additional 10 minutes to set.
- Remove from the oven and refrigerate for at least 4 hours (preferably overnight) before serving.
Notes
Use a water bath for extra moisture while baking to help prevent cracks.
