These peanut butter oat energy balls are the perfect snack for busy schedules, providing energy and satisfaction in every bite.
Ingredients

- 1 1/2 cups rolled oats (about 135 g)
- 1/2 cup natural peanut butter, smooth (about 128 g)
- 1/3 cup honey (about 113 g)
- 1/4 cup ground flaxseed (flaxseed meal) (about 30 g)
- 1/4 cup mini chocolate chips (about 43 g)
- 1 tsp vanilla extract
- Pinch of fine sea salt
Instructions
- In a large bowl, stir together the rolled oats and ground flaxseed until evenly combined.
- Add peanut butter, honey, vanilla extract, and a pinch of salt. Mix with a spatula or wooden spoon until a sticky, uniform dough forms.
- Fold in the mini chocolate chips.
- Scoop about 1 heaping tablespoon of mixture and roll between your palms into a round ball. Repeat until all mixture is used — you should get about 12 balls.
- For firmer texture, refrigerate the balls on a tray for 20–30 minutes before serving.
Notes
Use natural peanut butter for a cleaner flavor. You can freeze these for up to 3 months. Experiment with different ingredients for various flavors.
