Vegan Coffee Cake


Description

A comforting vegan coffee cake that combines the warm flavors of cinnamon and maple, perfect for any gathering.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 1 cup almond milk
  • 1/4 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup crumble topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round pan.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Let it rest for a minute.
  4. Combine wet and dry ingredients; fold in maple syrup and nuts if using.
  5. Pour half of the batter into the pan and sprinkle with half of the crumble.
  6. Add the remaining batter and top with remaining crumble.
  7. Bake for 30–35 minutes or until a toothpick comes out clean.
  8. Let it cool slightly before slicing.

Notes

Store covered at room temperature for 1–2 days. For longer storage, refrigerate or freeze.
