- 4 garlic cloves, minced
- 10 sun dried tomatoes, chopped
- 1 tbsp Italian seasoning
- 1 tbsp balsamic vinegar
- 3 tbsp tomato paste
- 2 cups cherry tomatoes
- 1 cup water or vegetable broth
- 7 oz full fat canned coconut milk
- 3 tbsp nutritional yeast
- Salt and pepper, to taste
- 2 cups baby arugula
- ½ cup flat-leaf parsley, chopped
- Vegan parmesan (optional, for serving)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add gluten-free fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta cooking water then drain. Set aside.
- Sauté aromatics: Heat a large skillet over medium. Add a bit of water or vegetable broth. Add minced garlic and chopped sun-dried tomatoes; sauté for 1–2 minutes.
- Caramelize flavors: Stir in Italian seasoning, balsamic vinegar, and tomato paste. Cook for 2–3 minutes until fragrant.
- Simmer sauce: Add cherry tomatoes and 1 cup of water or broth. Cover and cook for 3–4 minutes, then smash gently to release juices.
- Add creaminess: Stir in coconut milk and nutritional yeast. Season with salt and pepper. Simmer for 5–10 minutes until thickened.
- Combine pasta and sauce: Toss the drained fettuccine into the skillet and mix in baby arugula. Adjust seasoning as necessary.
- Serve: Plate the pasta and top with parsley and optional vegan parmesan.
Notes
For a smoother sauce, consider using an immersion blender briefly before adding the arugula. Avoid overcooking gluten-free pasta to prevent mushiness.
