- 1 ½ cups gluten-free all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 cup almond milk (or your favorite plant-based milk)
- 1 cup granulated sugar
- ½ cup coconut oil, melted
- ½ teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
- In a large mixing bowl, combine the gluten-free flour, cocoa powder, baking soda, baking powder, and salt. Whisk together until well blended.
- In another bowl, mix the almond milk, melted coconut oil, sugar, and vanilla extract until fully combined.
- Gradually pour the wet ingredients into the dry mixture, stirring gently. Do not overmix.
- Pour the batter into the prepared cake pan, spreading evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Frost or top as desired once fully cooled, and serve!

Store at room temperature for up to two days, in the fridge for a week, or freeze for up to three months. Reheat slices gently for best texture.
