  • 1 cup unsweetened cocoa powder
  • 1 cup almond milk (or your favorite plant-based milk)
  • 1 cup granulated sugar
  • ½ cup coconut oil, melted
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a large mixing bowl, combine the gluten-free flour, cocoa powder, baking soda, baking powder, and salt. Whisk together until well blended.
  3. In another bowl, mix the almond milk, melted coconut oil, sugar, and vanilla extract until fully combined.
  4. Gradually pour the wet ingredients into the dry mixture, stirring gently. Do not overmix.
  5. Pour the batter into the prepared cake pan, spreading evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  8. Frost or top as desired once fully cooled, and serve!

Store at room temperature for up to two days, in the fridge for a week, or freeze for up to three months. Reheat slices gently for best texture.
