  • 23 large tortillas (whole wheat or gluten-free)
  • 2 ripe avocados
  • ½ cup precooked black beans (rinsed)
  • ¼ cup corn
  • 2 tablespoons diced red onion
  • Juice of ½ lime
  • 1 garlic clove (minced)
  • 1 teaspoon cumin
  • Crushed red pepper to taste
  • Fresh cilantro
  • Sea salt and cracked pepper to taste
  • Olive oil

Instructions

  1. In a mixing bowl, mash the avocados until smooth, then mix in the minced garlic, lime juice, sea salt, cracked pepper, and crushed red pepper.
  2. Gently fold in the black beans, corn, diced onion, and chopped cilantro to the avocado mixture.
  3. In a non-stick skillet, heat a drizzle of olive oil over medium heat.
  4. Spoon half of the avocado mixture onto one half of a tortilla and fold it over. Repeat with the remaining tortillas.
  5. Place each folded quesadilla in the skillet, cooking until golden brown on both sides (about 3-4 minutes per side).
  6. Slice into wedges and serve immediately.

Notes

Avoid overmixing the filling for better texture. Look for a golden-brown color on the tortilla as an indicator of doneness.
