- 2 tablespoons soy sauce
- 1 cup vegetable broth
- 2 green scallions, chopped

- 1 teaspoon ginger, minced
- 1 teaspoon five-spice powder
- 1 cup mixed vegetables (bell peppers, carrots, peas)
- 2 tablespoons oil (olive or sesame)
Instructions
- In a pan, heat the oil over medium heat.
- Add minced garlic and ginger, cooking until fragrant (about 1-2 minutes).
- Stir in sliced mushrooms and cook until tender, around 5 minutes.
- Add mixed vegetables and tofu, sautéing for several minutes until heated through.
- Pour in the cooked rice and soy sauce, mixing well to prevent sticking.
- Add vegetable broth and five-spice powder, stirring to combine.
- Cook for an additional few minutes until everything is heated and flavorful.
- Garnish with chopped scallions before serving for a fresh touch.
Notes
Avoid overmixing the rice while cooking to maintain the fluffiness of each grain.
