Description

Ingredients

  • 2 cups cooked rice (preferably day-old for improved texture)
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 cup firm tofu, diced
  • 2 tablespoons soy sauce
  • 1 cup vegetable broth
  • 2 green scallions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon five-spice powder
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • 2 tablespoons oil (olive or sesame)

Instructions

  1. In a pan, heat the oil over medium heat.
  2. Add minced garlic and ginger, cooking until fragrant (about 1-2 minutes).
  3. Stir in sliced mushrooms and cook until tender, around 5 minutes.
  4. Add mixed vegetables and tofu, sautéing for several minutes until heated through.
  5. Pour in the cooked rice and soy sauce, mixing well to prevent sticking.
  6. Add vegetable broth and five-spice powder, stirring to combine.
  7. Cook for an additional few minutes until everything is heated and flavorful.
  8. Garnish with chopped scallions before serving for a fresh touch.

Notes

Avoid overmixing the rice while cooking to maintain the fluffiness of each grain.
