Ingredients

  • 2 large potatoes, grated
  • 1 cup mixed vegetables (carrots, bell peppers, peas)
  • 1/4 cup green onions, chopped
  • 1/2 cup all-purpose flour
  • 1 large egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the grated potatoes, mixed vegetables, and chopped green onions.
  2. Stir in the flour, egg, salt, and pepper until the mixture is well combined. Be careful not to overmix.
  3. Heat oil in a frying pan over medium heat—enough to cover the bottom of the pan.
  4. Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
  5. Fry until golden brown on each side, about 3-4 minutes per side.
  6. Drain on paper towels and serve hot.

Notes

For extra crispiness, let the batter sit for about 10 minutes before frying.
