			- 2 large potatoes, grated
 - 1 cup mixed vegetables (carrots, bell peppers, peas)
 - 1/4 cup green onions, chopped
 - 1/2 cup all-purpose flour
 - 1 large egg
 - Salt and pepper to taste
 - Oil for frying
 
Instructions
- In a large bowl, combine the grated potatoes, mixed vegetables, and chopped green onions.
 - Stir in the flour, egg, salt, and pepper until the mixture is well combined. Be careful not to overmix.
 - Heat oil in a frying pan over medium heat—enough to cover the bottom of the pan.
 - Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
 - Fry until golden brown on each side, about 3-4 minutes per side.
 - Drain on paper towels and serve hot.
 
Notes
For extra crispiness, let the batter sit for about 10 minutes before frying.
