- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup chopped bell pepper
- 1 cup chopped red onion
- 1 cup chopped parsley
- 1 cup chopped mint
- 1/2 cup feta cheese, crumbled
- 1/4 cup lemon juice (freshly squeezed)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the quinoa by rinsing 1/3 cup under cold water and cooking it in 1 cup of water for about 15 minutes or until fluffy. Allow to cool.
- In a large bowl, combine the cooked quinoa with chopped cucumber, bell pepper, red onion, parsley, mint, and feta cheese.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to combine.
- Serve chilled or at room temperature for best flavor.
