Ingredients

- 4 chicken thighs or breasts
- 1 onion, chopped
- 1 bell pepper, sliced (any color)
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Cooked pasta or rice for serving
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken and brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the chopped onion, sliced bell pepper, and minced garlic. Sauté until softened, about 5 minutes.
- Stir in the diced tomatoes (with juice), chicken broth, dried oregano, dried basil, salt, and pepper.
- Return the chicken to the skillet. Cover and simmer for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Serve the chicken and sauce over cooked pasta or rice for a complete meal.
Notes
For a lighter option, serve over a bed of fresh greens. Leftovers can be stored for up to 3 days in the refrigerator or frozen for 3 months.
