Weekday Chicken Cacciatore


Description

A hearty chicken dish simmered with colorful bell peppers, garlic, and tomatoes, perfect for cozy weeknight dinners.


Ingredients

  • 4 chicken thighs or breasts
  • 1 onion, chopped
  • 1 bell pepper, sliced (any color)
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Cooked pasta or rice for serving

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chicken and brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
  2. In the same skillet, add the chopped onion, sliced bell pepper, and minced garlic. Sauté until softened, about 5 minutes.
  3. Stir in the diced tomatoes (with juice), chicken broth, dried oregano, dried basil, salt, and pepper.
  4. Return the chicken to the skillet. Cover and simmer for about 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  5. Serve the chicken and sauce over cooked pasta or rice for a complete meal.

Notes

For a lighter option, serve over a bed of fresh greens. Leftovers can be stored for up to 3 days in the refrigerator or frozen for 3 months.
